Hummus, Avocado & Goat Cheese Sandwich

Our guest blogger Milou from Healthinut shows you how you can get your daily dose of veggies by using them in every meal of the day. She made carrot pancakes for breakfast and for lunch she made this spelt sandwich with hummus, avocado and goat cheese.

Ingredients: 
- 1 slice of (spelt) bread 
- 1/2 tbspn hummus 
- 2 slices of eggplant 
- 3 slices of zucchini 
- 1 tomato 
- 1/2 avocado 
- 1 disk of soft goat cheese 
- handful of rucola 
- 10 gram pine nuts 
- 1 tbspn olive oil 
- peper and salts 

Preparation: 
- Preheat a grill pan or grill iron. Cut the tomato, eggplant and zucchini into slices of 1/2 cm. Add peper and salt. Use a brush to add some olive oil. Cut the avocado into slices. Toast the pine nuts in a pan without oil until golden brown. 
- Grill the slice of spelt bread. Then grill the eggplant and zucchini until you can see brown stripes. 
- Place the slice of spelt bread on a plate and spread the hummus on top. Place the roasted eggplant, rucola, roasted zucchini, avocado and tomato on top. Add crumbled goat cheese and the roasted pine nuts on top.
