Zucchetti with Creamy Avocado Sauce

Our guest blogger Milou from Healthinut shows you how you can get your daily dose of veggies by using them in every meal of the day. She made carrot pancakes for breakfast and a sandwich with hummus, avocado and goat cheese for lunch. In her last video she's showing you how to make 'zucchetti' (zucchini spaghetti) with a creamy avocado sauce.

(serving size: 2) 
- 2 big zucchinis 
- 1 ripe avocado 
- 1 tbs lemon juice 
- 1 clove of garlic 
- 2-3 tbs olive oil 
- 20 grams pine nuts 
- big handful of basil
- peper and salt

- Cut the avocado in squares, squeeze the lemon juice, take the basil leaves from their branches and cut the garlic into little pieces. Get a kitchen machine, add all the ingredients (except for the zucchini) and grind until you've reached a smooth avocado sauce. 
- Cut the zucchini into spirals with a spirelli. Add the creamy avocado sauce and mix though the zucchetti. 
- Serve with some extra roasted pine nuts and a basil leave on top
